Green olives collected from the healing mountains of Tire during the early harvest period (October) are processed at 25 degrees using the cold press method, offering a unique flavor to your tables. Early harvest olives contain more antioxidants and polyphenols than ripe olives. This processing technique maximally preserves the polyphenols and antioxidants, allowing you to benefit optimally from the healthy properties of olive oil.
