Green olives harvested in the early harvest period (October) from the healing mountains of Tire are processed at 25 degrees using the cold-press method, offering a unique flavor to your tables. Early harvest olives contain more antioxidants than mature olives. In particular, the polyphenols and antioxidants they contain are preserved to the maximum extent with this processing technique, allowing us to benefit optimally from the health-promoting properties of olive oil. This makes early harvest olive oil beneficial for heart health and the immune system. Early harvest olive oil may have a more bitter and pungent taste than oils obtained from mature olives. This bitterness results from the effect of polyphenols and generally indicates high quality. Since early harvest olive oils are obtained from unripe olives, they carry a fresher, fruitier, and more herbaceous aroma. Some flavors may include notes such as fresh greens, grass, and almond.
